Tomato and Cucumber Gazpacho
Freshness of a vitamin-packed soup with seasonal vegetables. Ingredients: 4 tomatoes 110 g red pepper 1/4 red chili 50 g red onion 1 garlic clove 200 g cucumber 1/2 teaspoon cumin 2 tbsp cider vinegar 2 tbsp olive oil 2 tbsp lemon juice a bunch of parsley or basil Salt, pepper. Put in a bowl 4 nice tomatoes in pieces + 110 g red pepper + 1/4 red chili + 50 g red onion + 1 garlic clove + 200 g cucumbers + 1/2 teaspoon cumin, salt and pepper. Blend everything until smooth. Add 2 tablespoons cider vinegar + 2 tablespoons olive oil + 2 tablespoons lemon juice and a small bunch of parsley or basil. Mix lightly. Serve chilled! Recipe and photo by Happyofood
