Lemon and Goji Berry Scones

Ingredients for 12 scones 450g self-raising flour - 1 pinch baking powder - 1 pinch salt - 40g sugar - 50g goji berries - the zest of a nice lemon - 110g cold butter, cut into small cubes - 1 egg - 50ml lemon juice - 200ml whole milk - 1 egg and a little water for the glaze Preparation time: 20 min Level: medium (do not overwork the dough!) Cost: economical 1. Preheat the oven to 180°C. In a bowl, mix the self-raising flour, yeast, salt, sugar, goji berries and lemon zest. 2. Add the cold butter in small cubes and rub with your fingertips until you get a mixture resembling breadcrumbs. 3. In another bowl, whisk the egg, lemon juice, and milk together. Pour into the dry mixture and mix with a large fork. 4. Form a ball in the bowl, add flour, and pour it onto a floured work surface. Roll out the dough to a nice thickness (at least 3 cm) and cut out circles with a round cutter (you can cut them into triangles, the actual shape of scones). 5. Arrange them on a baking sheet lined with baking paper. Brush each scone with the egg mixed with a little water. Bake for 18 minutes. The scones are ready when they are golden brown.
