50 ANCHOR - SUMMER OYSTER MUSHROOM AB
Pleurotus pulmonarius
The summer oyster mushroom is a species of native beige-coloured oyster mushroom whose cultivation is identical to that of the oyster mushroom but the carpophores appear in summer until the beginning of autumn. The cultivation of this oyster mushroom is done in the same way as that of the oyster mushroom (Pleurotus ostreatus) that is to say on large poplar or beech logs, freshly cut. The pulmonary oyster mushrooms are more thermophilic than the oyster mushroom: the picking period begins in mid-summer until the beginning of autumn (in the North) or until the end of autumn (in the South). My ankles are not covered with mycelium, what should I do? If you do not see any mycelium when you receive your ankles, be patient, it will develop. Store your bag without opening it or moving the ankles, at room temperature in light but not direct light. Preserving the dowels before use It is possible to store the dowels for one month in the refrigerator without opening the bag. Step 1: when should you insert the dowels? Autumn, winter and early spring (from November to the end of March) are the best periods for inoculation so that the mycelium can develop sufficiently to produce a harvest in autumn. The dowels will adapt well to cold and frost. Step 2: which stumps should you use to insert the dowels? You can use freshly cut poplar stumps (3 months maximum) with a length of 80cm to 120cm. The larger the diameter of the log, the longer the cultivation will take since the mycelium will take longer to degrade the log of wood. Recommended wood species: Poplar, elm, birch and alder. Step 3: how to make the holes and insert the dowels? Make 9 mm Ø holes using a drill in a staggered pattern then gently hammer in the mycelium pegs. There should be no space between the peg and the wood. You can fill the holes with beeswax. Moisture is a key element for the proper development of mushrooms on logs, water your stumps after inserting the pegs. The trunks must be stored away from wind and sun and always remain moist for 3 months. You can cover the wood with tarpaulin for more shade. Step 4: mushroom development Bury the logs 2/3 of the way down, away from sun and wind. After 7 to 8 months, the logs should be colonized by the whitish mycelium. It quickly becomes cottony and then thick and tenacious. Make sure your logs are constantly moist (but not flooded), when the buds appear, do not water the logs any more otherwise the oyster mushrooms will not develop. The harvest period begins in mid-summer until the beginning of autumn (in the North) or until the end of autumn (in the South). »How to cook oyster mushrooms? We advise you to eat young oyster mushrooms so that they keep their tenderness, grilled in the oven or on the barbecue, marinated or simply fried in olive oil with garlic.
